Another new version of one of our favorite ciders, Stayman Winesap SVC The Rural Method is something new for us. This cider is bottled semi-sweet, in contrast to the rest of our catalog which is bottled dry or off-dry. Apples are the only fruit that can "keeve" or stall a fermentation to maintain residual sweetness without adding anything to the tank. In classic French keeving, pectins from the apples are used. Alternatively, the technique we employed used multiple rackings - known as The Rural Method. By whatever nerdy means it occurred, we're excited to offer you something with a little more sweetness without compromising the integrity we apply to our cidermaking.
